Sticky Honey Garlic Chicken

A couple of evenings ago, I threw together a glaze that turned out to be an absolute showstopper. It was one of those "use what’s in the cupboard" moments that somehow resulted in something so good, we were scraping the pan clean. 

This honey-based glaze is sticky, garlicky, and just the right amount of sweet. It clings beautifully to whatever protein you throw it on—chicken, pork, tofu, even roasted veg would work. But on this night, it was all about the drumsticks. Cheap and cheerful!  

Due to honey, it is not recommended to serve this to a baby/ child below 12 months of age. However, substitute the honey for maple syrup and you'll be grand! 

Sticky Honey Garlic Chicken 
Serves 2–3 

Ingredients: 

  • 6-8 chicken drumsticks 

  • 3 tbsp soy sauce 

  • 2 tbsp honey 

  • 3 garlic cloves, minced 

  • 1 tsp oil 

  • Optional: a pinch of chilli flakes, chopped spring onion to garnish 

Method: 

  1. In a small bowl, whisk together the soy sauce, honey, garlic, and a splash of water to loosen the mixture slightly. 

  2. Heat the oil in a pan over medium-high heat. Sear the chicken drumsticks until golden brown on all sides—this step adds flavour and helps the sauce cling better. 

  3. Pour the sauce over the chicken, reduce the heat, and cover. Let it simmer gently for 20–25 minutes, turning occasionally, until the chicken is cooked through and the sauce has reduced to a glossy, sticky glaze. 

  4. Finish with a sprinkle of chilli flakes or fresh spring onion if you like a bit of heat or crunch. 

    Alternatively, pop the chicken drumsticks in the oven for around 20 mins at 180 degrees. Remove and coat in the glaze and continue to cook for around 25-30 minuets. Remove to baste the chicken a few times throughout this.  

I served this with long grain rice and tendersteam broccoli for a fuss free, easy dinner.  in the last 15 mins of the chicken cooking, I tossed the broccoli in any gaps and returned to the oven.
