Sausage Stew
This wholesome sausage stew-of-sorts was whipped up in a pinch but boy, did it blow my expectations.
Super simple and delicious, can be done with meat or veggie/vegan sausages.
Ingredients
Pack of pork sausages (or veggie)
2 carrots
1 onion
1 tsp garlic puree or 1-2 minced garlic cloves
3-4 potatoes
150g red lentils
Chicken or veg stock cube
2 bay leaves
1 tsp dried thyme
How to do
In a deep saucepan heat a little oil and fry off the sausages. Whilst they're browning, half and slice the carrots, cut the onions into chunks and peel and chop the potatoes. Chuck them into the pot alongside the sausages.
Crumble in a stock cube, add bay leaves, thyme and lentils alongside around 800ml of water.
Give it a good stir and leave it be on a low - medium heat for around 20 mins, stirring occasionally.
Using a spoon, break apart the sausages, the consistency should be a nice thickness where it will coat a spoon and slowly drip off.
If it's too thin - cook for another 10/15 mins to reduce
