Vegan First Birthday Party Food
In this blog post, I will detail how to make vegan pitta pizzas, vegetable fritters and "sausage" rolls. It was my daughter's first birthday recently and we threw a little shindig of sorts.
Due to various dietary requirements, it was best to go vegan! And we did just that. The food was delicious and so more-ish, if I do say so myself.
I have detailed below smaller yields for these recipes, if making a large amount, just double or triple as required!
Mini Vegan Sausage Rolls
Golden, flaky, and packed with savoury lentils and mushrooms, these plant-based sausage rolls are a guaranteed crowd-pleaser.
Makes: ~16 mini rolls
Prep time: 30 mins
Cook time: 25 mins
Ingredients:
1 sheet vegan puff pastry
1 x 400g tin lentils, drained
125g mushrooms, finely chopped
1 small onion, finely diced
1 clove garlic, minced (optional)
100g breadcrumbs
1 tsp dried thyme
1 tsp smoked paprika
1 tbsp soy sauce (optional)
Plant-based milk, for brushing
Olive oil, for frying
Method:
1. Heat olive oil in a pan. Cook the onion, garlic, and mushrooms until soft and most of the moisture has evaporated.
2. Add lentils, soy sauce, thyme, and paprika. Cook for 2–3 minutes, then lightly mash to combine.
3. Stir in breadcrumbs and let the mixture cool.
4. Cut the pastry sheet in half lengthways. Spoon the filling along one side of each half, roll up, and seal the edge.
5. Cut into mini rolls, place on a lined baking tray, and brush with milk.
6. Bake at 200°C (180°C fan) for 25–30 minutes, until golden and crisp.
Sweetcorn & Veggie Fritters
Crispy on the outside, soft on the inside—these easy fritters are loaded with colourful veg and gentle spices.
Makes: ~12 fritters

Cook time: 15 mins
Ingredients:
1 courgette, grated and squeezed of moisture
2 small carrots, grated
150g sweetcorn (fresh, tinned, or frozen)
120g chickpea flour (or plain flour)
1 tsp baking powder
1 tsp ground cumin
1 tsp smoked paprika
100ml water
Olive oil, for frying
Method:
1. Combine courgette, carrot, and sweetcorn in a bowl.
2. Add flour, baking powder, cumin, and paprika. Mix well.
3. Stir in water gradually until you have a thick batter.
4. Heat a little oil in a non-stick pan. Drop spoonfuls of the batter into the pan and flatten slightly.
5. Cook for 2–3 minutes each side until golden and cooked through.
6. Drain on kitchen paper and serve warm or room temp.
Mini Pitta Pizzas
Fun, simple, and easy for little hands—these mini pittas are perfect for parties or lunchbox treats.
Makes: ~8 mini pizzas
Prep time: 10 mins
Cook time: 10–12 mins
Ingredients:
4 mini pittas (or 2 large ones cut into smaller rounds)
200ml passata
1 tsp dried mixed herbs
1 red pepper, thinly sliced
100g grated vegan cheese
Olive oil, for brushing
Method:
1. Preheat oven to 200°C (180°C fan).
2. Place pittas on a lined tray. Spread with passata, sprinkle with herbs.
3. Top with red pepper and grated vegan cheese.
4. Bake for 10–12 minutes until the cheese is melted and the pittas are crisp.
