‘BBQ’ Drumsticks and Wedges

These "BBQ" drumsticks were so morish and just a lovely dinner. My family thoroughly enjoyed this and so did I! 

Ingredients 

4/5 medium potatoes

1kg chicken drumsticks 

100g ketchup (low salt and sugar)

2 tbsp soy sauce (low salt)

2 tbsp maple syrup 

To serve with (optional)

Pre-made cheesy coleslaw 

Tin of sweetcorn 

How to do - 

Preheat the oven to 200⁰c, slice the potatoes in half, half again, half again until 8 wedges per potato. Scatter skin side down on a baking tray, drizzle with a little oil and pepper and pop in the oven. 

Arrange the drumsticks evenly in the tray and pop in also, for 20 minutes. 

To make the BBQ, mix the ketchup, soy sauce and maple syrup. Set aside to spread over the chicken shortly! 

I drained some sweetcorn and mixed it in to some coleslaw to make it spread further. 

Once the 20 mins is up, spread the BBQ sauce on the chicken drumsticks and return to the oven for 15-20 minutes until nicely browning. 

Double check the wedges! Then serve!

To serve to my little lady, I squished the wedges. Shredded the chicken off the bone, coating in a little BBQ sauce from the pan, and popped some grated cheese on the side!
